Banana Bread Recipe

I know it has been a very long time since I have posted anything.  I think that is just the way it is going to be until the hubby finishes his master's degree. But I did manage to take a few photos of one of the loaves of delicious Banana Bread I have made since my last post, so I thought it might be worth posting the recipe while I have some time on my hands.  This recipe calls for "soured milk" which is NOT milk that has gone sour.  It is milk that has had vinegar or lemon juice added to it as in this tutorial.  Alternately, you can use buttermilk or just plain milk instead and it tastes just as good. So, here it is, my favorite Banana Bread Recipe:
  • 2/3 c sugar
  • 1/3 c butter, softened
  • 2 eggs
  • 3 tbs. soured milk
  • 1 1/2 c mashed bananas (abt. 3 medium)
  • 2 c flour (I use half white whole wheat)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1-2 tbs cinnamon (depending on tastes)
Preheat oven to 325 F. Cream together sugar, butter and eggs.  Add in milk, and then bananas.  Beat in dry ingredients, minus cinnamon. Once all dry ingredients are well incorporated, add cinnamon to preference (I usually add enough of it to smell pretty strong...I like a lot of cinnamon).  Pour batter into standard sized loaf pan and bake for 1 hour 15 min.  Makes one loaf.

Tip For Peeling Eggs

Image by khunaspix via freedigitalphotos.net  The best part of having your own chickens is fresh eggs.  Since spring feels like it has arrived in our neck of the woods, our chickens have ramped up their egg production significantly in the last couple of weeks.  This occurred right after I bought a dozen and a half eggs from Costco since I wasn't expecting to have so many fresh ones on hand for a few weeks yet.  Oops.  So here I was with a huge amount of eggs, trying to figure out what to do with them.  Then I remembered a family pot luck we had coming up and decided it would be the perfect opportunity to use up a dozen or more eggs in hard-boiled form on a big batch of potato salad.  Since I was making hard boiled eggs, I though I'd share my little trick for peeling them.
